How to make Falernum

How to make Falernum

Falernum is a sweet syrup that is used in many Caribbean cocktails. It is made from sugarcane, lime, and spices. Falernum is a sweet, syrupy liqueur made with spices, citrus, and sometimes ginger. It is used in cocktails, and can also be used as a syrup for pancakes or waffles.

You have no idea how my family is reacting to a refrigerator full of mason jars with green, funky-smelling liquids in them and that's in the spaces between the rum bottles. So now that I'm sort of bored of fiddling with the recipe, I thought I'd share it with my readers.

Falernum #8
6 ounces Wray & Nephew Overproof White Rum
zest of 9 medium limes, removed with a microplane grater or sharp vegetable peeler, with no traces of white pith
40 whole cloves (buy fresh ones — not the cloves that have been in your spice rack since last Christmas)
1 1/2 ounce, by weight, peeled, julienned fresh ginger

Combine these ingredients in a jar and seal, letting the mixture soak for 24 hours. Then, strain through moistened cheesecloth, squeezing the solids to extract the last, flavorful bits of liquid.

Add:
1/4 teaspoon almond extract*
14 ounces cold process 2:1 simple syrup (two parts sugar to one part water, shaken in a jar or bottle WITHOUT HEAT until all the sugar is dissolved)
4 1/2 ounces fresh, strained lime juice


Shake it all together and serve.

Version two:


Ingredients
: 1 cup sugar 1 cup water 1 teaspoon grated lime zest 1/2 teaspoon grated ginger 1/4 teaspoon ground cloves 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cinnamon 1/2 cup white rum Directions: 1. Combine the sugar, water, lime zest, ginger, cloves, nutmeg, and cinnamon in a saucepan over medium heat. 2. Bring the mixture to a simmer, and cook until the sugar has dissolved. 3. Remove the pan from the heat, and stir in the rum. 4. Pour the falernum into a clean bottle, and seal with a lid. 5. Store the falernum in the refrigerator for up to 6 months

Classic Tiki Cocktail Drinks: The "Jet Pilot" cocktail recipe using 3 types of rum!

Classic Tiki Cocktail Drinks: How to make the "Jet Pilot" cocktail for your tiki lounge.

This is a cousin of the famous "Test Pilot" tiki cocktail.
The origins of the "jet pilot' go back to around 1950, where the drink was invented at the Luau Restaurant. This drink really symbolizes many tiki drinks, it's got three rums and exotic fruit juices. It usually has a limit two or one in the tiki bar drink menus. This drink, as with many classic tiki cocktails, takes a bit of prep, but the rewards are well worth the effort. This is one of those vintage tiki cocktails that you just have to try, so give it a go! This one is potent, it contains three types of rum.  The Cinnamon syrup and bitters combine to give it a interesting edge.  The anise liqueur also helps to give the drink some complexity. It is amazing how all the ingredients in this drink blend so well together. If you like rum and want a great rum recipe, you have to give the Jet Pilot a go. It's a great addition to your tiki bar.

You can also use absinthe instead of Pernod, which is what we did. Also if you do not have any cinnamon syrup you can use the powered spice if you have to, but it is not preferred.

Jet Pilot Recipe: 
Ingredients:
• 1 oz Jamaican rum (Appleton, Wray and Nephew, etc.)
• 3/4 oz gold Puerto Rican rum (Ron Llave Supremo, Bacardi Gold, etc.)
• 3/4 oz 151-proof demerara rum (Lemon Hart)
• 1/2 oz grapefruit juice
• 1/2 oz Fresh lime juice
• 1/2 oz cinnamon syrup (Torani, Monin, etc)
• dash of Angostura bitters
• 6 dashes Pernod or Herbsaint or Absinthe
• 4 oz crushed ice
• cherry for garnish

Mixing Instructions:
Pour all of the liquid ingredients into a cocktail blender.
Add the ice to the blender.
Blend for about 10-15 seconds.
Pour into a hurricane, margarita glass or favorite tiki mug.
Garnish the cocktail with a cherry which is sometimes caramelized, or small toy plane.

• 1/2 oz Trader Vic's Chocolate Liqueur

Mixing Instructions:
Mix all the ingredients in a cocktail shaker with ice and stir, do not shake this one.
Now, strain into a martini glass. 
Garnish with chocolate shavings.

Classic Tiki Drink Recipes: The Don the Beachcomber's "Cobras Fang" recipe.

Tiki Cocktails: How to make the old school Don the Beachcomber version of the Cobras Fang Cocktail.
This is a classic, vintage tiki cocktail that you gotta try. A great drink to try at the tiki bar or tiki lounge.

Like many tiki cocktails this one takes a bit of prep, but it is well worth the effort.
Two rums give it a nice kick, but is balanced well by the tropical fruit juices.
If you can't find Fassionola, you can use a any quality fruit punch.

Cobras Fang Recipe:
Ingredients
1/2 oz. Fresh squeezed lime juice
1/2 oz. Falernum (fee brothers, john d. taylor's velvet, etc.) Passion fruit.
1/2 oz. Fresh orange juice
1/4 oz. Fassionola (hard to find, can use fruit punch.)
1/2 oz. Dark Jamaican Rum (appleton Estate, Myers dark rum, etc.)
1/2 oz. Lemon Hart Demerara  151
1 dash each Angostura bitters,
selected herbs (who knows???)
grenadine

Mixing instructions:
Mix all of the ingredients with crushed ice in a cocktail shaker.
Shake until cold.
Serve in a tall tiki glass
Garnish the drink with mint leaves and lime wheel.

In the next we weeks we will be focusing on the new Malibu Black. Which is a dark colored Malibu with a higher proof than normal Malibu and of course it has a flavor of coconut.  We had a chance to experiment with it this week, and we will be posting the results.

Malibu Black and Stormy Recipe:
Ingredients:
• 1.5 parts Malibu Black
• Top with Ginger Beer

Mixing Instructions:
Mix ingredients in a highball glass with ice and thats all you have to do, very easy to make.

New School Tiki Cocktails: Introducing Poptails, a frozen cocktail treat, this recipe is for a Mango Maui Mai Tai

How to make a frozen new school tiki concoction called the "Mango Maui Mai Tai", in the new catogory called "Poptails", a nice mix of cocktail and popsicle. A very fun cocktail.

A great way to cool off on a hot summer night at the tiki bar.

It got up to 104 today outside, so we tthought, what a perfect time to try the Mango Maui Mai Tai poptail.  Here is how to make one yourself.

Mango Maui Mai Tai Poptail Recipe:

• 2 mangoes peeled and cubed
• 1/4 lb pineapple peeled and cubed
• 1/2 cup limeade
• 2 oz white rum
   (Bacardi Superior White Rum, Appleton White Rum, Wray & Nephew Rum White, Appleton Estate Classic , Myer's Platinum White Rum, etc.)
• 2 oz gold rum (Goslings Bermuda Gold Rum, Bacardi Gold, etc.)
• 1 oz dark rum (Cruzan Estate, Whalers, Black Strap Rum, Pusser's, Myer's Dark Rum, etc.)

Instructions:
Mix the mango, pineapple and limeade in a cocktail blender.
Blend until everything is pureed nicely. 
Add the rums and blend a bit more.
Pour the mix into a popsicle mold.
Now, freeze and insert the popsicle sticks.


Poptails are a wonderful frozen cocktail treat for your tiki party of luau.

Tiki Cocktail Spirits: Crystal Head Vodka, a very cool spirit for your tiki bar.

Learn all about the new Crystal Head Vodka.  
Bring some voodoo to your tiki bar.

Right away we have to tell you, the co-founder of Crystal Head Vodka is the actor and SNL star Dan Aykroyd. This alone for me made the purchase a must. Well that and the really cool clear skull bottle. I have always had a fondness for skulls. And it does look fantastic on the shelf of the tiki bar I must say.


It is definitely a conversation starter. People always ask me about it when they see it at the tiki bar.
I will keep the bottle after the vodka is gone.


Crystal Head Vodka

Crystal Head Vodka is manufactured by Diamond Estates Wines and Spirits Ltd. Located both in Newfoundland and Labrador, Canada.

The main aspect of this vodka is that it is quadruple-distilled, triple-filtered through charcoal and get this, triple-filtered through Herkimer diamond crystals. 

The clear skull bottle is made by Bruni Glass and is packed nice in a rigid cardboard box and a wooden bottle closure for extra protection.

Overall, the vodka has a very smooth taste, from the major distillation process mentioned above. It also has hints of a little bit of licorice at the end.

As a added bonus, it looks real cool if back lite with colored lights.



All in all you gotta try it with your favorite vodka based tiki concoction.

Tiki and tropical drink recipes: The "Pineapple Mojito" cocktail drink.

How to make the Pineapple Mojito, a great tasting tropical cocktail for your tiki bar.
A great drink to cool off to while you are chilling in the tiki lounge.




Pineapple Mojito Recipe:

Ingredients
• 3 sprigs mint (one for garnish)
• 2 teaspoons of sugar half a lime, chopped
• 1-1/2 ounces light rum (Bacardi, cruzan, trader vic's, etc.)
• 2 pieces fresh pineapple

• Club Soda

Procedure.
Muddle 2 sprigs of mint, lime, pineapple, and sugar in a mixing glass to release the essence. Then add the rum. Shake in a cocktail shaker with ice. Shake until cold. Then strain into a highball glass with ice. Top with the club soda and garnish with the remaining mint sprig.

Tiki drink recipes: The "China Village Mai Tai" recipe using rum as a base.

How to make the "China Village Mai Tai", with recipe and instructions.
This is a great variation of the traditional trader vic mai tia. A great tiki cocktail for your tiki bar or luau. This drink is starting to become more and more popular in the last couple of years. It gets high votes from people who have tried it. It's a modern restaurant take on the classic mai tai's. It is very different than the traditional Mia Tia, it uses very different ingredients. The traditonal Mai Tai uses orgeat or almond, which this version does not.



China Village Mai Tai Recipe:
Ingredients
• 1 part Bacardi dark rum
• 1 part Bacardi light rum
• 1 1/2 parts triple sec
• 1/2 part Tropicana® orange juice
• 1 oz canned pineapple juice
• 1/4 oz grenadine syrup
• ice cubes (crushed)

Instructions:In a cocktail shaker add ice cubes. 
Then, add the Bacardi dark rum and light rum, grenadine, orange juice, and then the pineapple juice. Top the mix with the triple sec and shake until cold and frosty.
Serve in a Collins glass, tiki mug, or any unusual cocktail glass.
Garnish the cocktail with a cherry.

Hawaiian Volcano Cocktail Punch Recipe:
Ingredients
• 1 gallon Hawaiian fruit punch
• 2 cups guava juice
• 2 bottles cold ginger ale or lemon-lime soda
• 1/2 gallon rainbow sherbet
• 1 bottle of Cheap White Rum

DIRECTIONS:
Mix the fruit punch and the guava juice.
Slowly add the sherbet. Pour the ginger ale onto the sherbet. This will make the punch foam up similar to a volcano, which is fun for kids of all ages to watch.

Tiki Drink Recipe: Bali Hai Cocktail Drink complete recipe.

This is a very popular tropical drink that you should give a try at the tiki bar, a true classic.



Bali Hai Recipe:
Ingredients
• 2 oz. Light Rum (Bacardi, Cruzan, Trader Vic's, Etc)
• 1 oz. Aguardiente (sugarcane and anise drink) 
• 2 oz. fresh lemon juice
• 1 tsp. Almond Orgeat syrup
• 1 tsp. Grenadine
• Champagne or Sparkling wine

MIXING DIRECTIONS:
Combine all of the ingredients, except the champagne, into a cocktail shaker with ice. Shake the mix until cold a frosty. Pour into a tiki or hurricane glass. Top off with some cold champagne.

Polynesian Cherry Cocktail Recipe.

Ingredients.
• 2 oz. vodka (Skky, Grey Goose, etc.)
• 1 oz. cherry brandy (Hiram Walker, Kammer Kirschwasser, Clear Creek, De Kuyper,
• 1/2 oz. fresh lime juice
• 1/2 oz. fresh lemon juice
• lime wedge
• bar sugar
Garnish with lime wedge and cherry

Procedure:
Rim each of the cocktail glasses with the sugar by rubbing the rim of the glass with the lime wedge and then dipping it in the sugar. Mix the rest of the ingredients with the cracked ice in a cocktail shaker and shake well until cold a frosty. Pour the mixture into your favorite tiki cocktail glass or mug.

Procedure:
Combine all the ingredients into a cocktail shaker with ice. Pour the mixture into a chilled old- fashioned glass or a tiki mug. Garnish the drink with the orange slice.

Like many tiki cocktail drinks, this one requires a bit of preparation to make.
But well worth it for your tiki lounge list of cocktails.

This is a complex tasting drink the gin gives it a freshness, the rum it's depth. And the apricot and papaya nectar blend well together and give it a tropical sweetness. Do not overuse the Angostura bitters, a few dashes is all you need.

Martian Sunblock Recipe:
Ingredients:
• 2 oz Gin (Bombay Sapphire, Tanqueray, Beefeater, etc.)
• 1/2 oz Wray and Nephew overproof rum, 151
• 1/4 oz pimento dram
• 1 oz apricot nectar
• 1 oz papaya nectar
• 1/2 oz lime juice
• 1/2 oz simple syrup (bar syrup, sugar water)
• 1-3 dashes Angostura bitters

Procedure:
Shake all ingredients in a cocktail shaker with ice until nice and cold.
Strain into a class with crushed ice.

This one come to us from tiki bar guru James Teitelbaum in Chicago.
This tiki cocktail uses Gin and not Rum and a few other exotic ingredients.

St. Germain Elderflower Liqueur
Peychaud's bitters
The Velo Recipe:
Ingredients

• 3/4 oz. fresh lime juice
• 1/2 oz. passion fruit syrup (Torani, Fee Brothers, Monin, Trader Vic's, etc.)
• 1 oz. St. Germain elderflower liqueur (French liqueur made from hand-picked elderflower blossoms.)
• 1 1/4 oz. Gin (Bombay Sapphire, Hendrick's Gin, Beefeater, Tanqueray, Gordon's London, etc.)
• 4 dashes Peychaud's bitters

Procedure:
Shake well in a cocktail shaker with ice cubes.
Strain into a chilled wine glass.

Tiki cocktail drinks: Death in the South Pacific Recipe.

This Tiki Cocktail won the 2010 Tales of the Cocktail Tiki Punch-up competition.

This is a complex and exotic tiki drink for your tiki bar. It is rather complex to make, but the effort is worth it. The Death in the South Pacific has won a few Tiki drink contests, which demonstrates the caliber of this tiki cocktail. A must try drink for any tiki cocktail adventurer. Death in the South Pacific was invented by Washington bartender Evan Martin. Here is what Evan has to say about the name; “The drink’s name is a play on Love in the South Pacific and Death in the Afternoon."

Here is what tiki expert Jeff Berry had to say; “This drink hits all the contest requirements on the nose: It creatively mixes multiple rums, sweeteners, and citrus to “tikify” the Planter’s Punch template; it has a full-bodied, layered, but not overcomplicated flavor; and its garnish shows theatrical flair, cleverly referencing the drink name.” This drink is a favorite to many.

This tiki cocktail takes a bit of prep, but is well worth it.

Death in the South Pacific Recipe:
Ingredients.

0.75 oz. Appleton Estate Extra 12 Year Old Rum
0.75 oz. Rhum Clement VSOP Rum
0.5 oz. Grand Marnier
0.33 oz. Trader Tiki Orgeat Syrup
0.33 oz. Fee Brothers Falernum
3 dashes Absinthe (Lucid Absinthe, Le Tourment Vert, Pernod, Kubler, etc.)
0.5 oz. Fresh lime juice
0.5 oz. Fresh lemon juice
0.5 oz. Fee Brothers Grenadine
0.5 oz. Cruzan Blackstrap Rum

Mixing Instructions: Mix all of the ingredients except for the grenadine and Cruzan Blackstrap Rum in a mixing glass with crushed ice. Swizzle the drink until cold and mixed. Pour in the grenadine. Overfill the glass with crushed ice and then pour in the Cruzan Blackstrap rum.

To Garnish: Take a bamboo skewer cherry through at the very top followed pineapple leaf and then cut off skin from 1 large orange slice and then cut the strips in half. Insert the ends through the skewer having them hang on opposite sides of each other. Then insert the straw through the loop in the bamboo skewer.

Tiki Drink Recipes: The Volcano House Hot Buttered Rum Recipe

Tiki drink recipes: How to make a Tiki version of a Hot Buttered Rum called the Volcano House Hot Buttered Rum.

The classic Hot Buttered rum drink has been around for quite some time. This recipe dates back to the 1950’s, when Bob Ida invented the cocktail at the Volcano House Hotel in Hawaii. This is the tiki cocktail version from Jeff Berry. Hot buttered rum has been a favorite winter drink for many years and this is a nice variation of the old classic. The use of tea instead of coffee, also puts a nice twist in it.

Volcano House Hot Buttered Rum Recipe:
Ingredients
• 1.5 oz Dark Rum (Jamaican or Demerara rum)
• 3/4 oz Sugar
• 3/4 oz Lemon Juice
• 1/4 oz Maraschino
• Hot Black Tea
• Butter

Procedure:
Pre-heat a tiki mug. Add sugar, juice, maraschino and rum into the warm tiki mig.
Add the hot tea to the mug and stir. Float the butter on top of the drink.
Garnish the cocktail with lemon peel and cloves.

New School Tiki Cocktail Drinks: The Ancient Mariner Recipe, a wonder blend of rums and fruit juices.

Tiki Recipes: How to make the tiki drink cocktail called the Ancient Mariner.

Jeff Berry is credited for inventing this wonderful tiki cocktail drink.

The Ancient Mariner Recipe:
Ingredients
• 1 ounce Demerara Rum
• 1 ounce Dark Jamaican Rum
• .75 ounce Lime Juice
• .5 ounce Grapefruit Juice
• .5 ounce Simple Syrup (bar syrup, sugar water)
• .25 ounce Pimento Dram

Shake the ingredients with ice in a cocktail shaker until cold and frosty. Then strain over cracked or crushed ice into a double old-fashioned glass. Garnish this cocktail with a lime wedge and a mint sprig.

Tiki Cocktails: The Colorado Bulldog Recipe using Kahlua.

How to make a classic Colorado Bulldog cocktail drink.
Not a traditional tiki drink, but a great addition to the list of drinks for your tiki bar. The Kahlua kinda gives it the tropical tiki vibe. I have one of these every time I am in the pub down the street.




Colorado Bulldog Recipe:
Ingredients:
• 1 oz vodka (Skyy, Smirnoff, Grey Goose, Absolut,etc.)
• 1 oz Kahlua coffee liqueur
• 2 oz half and half or milk
• A splash of Coca-Cola


Cocktail Mixing Instructions: Pour the first three ingredients over ice in a large cocktail glass.
Stir mixture. Top the cocktail with a large splash of Coca-Cola.

Classic Tiki Drink Recipes: The Cuban Sangria Recipe

Tiki and Island Drink: How to make a Great Cuban Sangria for your Luau or Tiki Party.

The word Sangria gets it's name from the spanish word for blood because of the red or ruby color. Summer is the best time for Sangrias. Great Sangrias can be hard to find. This is because Latin families hold their recipes as family secrets handed down from parent to child.

A sangria is a mix of wine, tropical fruits, fruit juices and sometimes a extra spirit to give it a little kick. Liquors used are usually Brandy, Triple sec, or Rum. Sometimes sugar is added for a extra sweetness.

It is usually made with a red wine, but sometimes a white wine is used.

One of the secrets of a good Sangria is letting it sit and infuse. You can let it infuse for a few hours or a few weeks.



Cuban Sangria Recipe:
Ingredients:

• 1 bottle burgundy or red wine
• 1/2 bottle of a light rum (Cruzan, Bacardi, etc.)
• 4 shots Cointreau or Triple Sec
• 6 shots vodka ( (Smirnoff, Grey Goose, Absolut, Skyy, etc.)
• 4 shots Grand Marnier
• 1 liter seltzer water
• 1 pineapple, sliced (or can)
• 4 Granny Smith apples, sliced
• 6 oranges, sliced
• 1 quart of pineapple juice
• 1 quart of orange juice
• 2 limes, sliced
• sugar to taste

Preparation:Slice the fruits and place in a container. Add the fruit juice. Add alcohol and then sugar. Before serving add ice and seltzer.

New School Tiki Cocktail Drink: Happy Hoti Tiki Cocktail Recipe

Here's a new school tiki cocktail found on Trader Tiki that has been served at major tiki events around the county. I have tried it a few times and do enjoy it every chance i get.

Happy Hoti
• 2 oz. Pyrat XO Reserve
• 1/2 oz. Fresh Lemon Juice
• 1/2 oz. Falernum
• 1/2 oz. Rock Candy Syrup
• dash Fee Brothers Old-Fashioned Bitters


Shake until frosty and strain into cocktail glass.
Garnish this cocktail drink with maraschino cherry and mint leaf.

Classic Tiki Cocktail Recipes: Puka Punch drink recipe from Tiki-Ti

How to make the Puka Punch tiki cocktail drink like the from LA's famous tiki temple the Tiki-Ti Tiki Bar. 


This drink is exotic due to all the ingredients that go into this drink. It is well worth the preparation for a classic tiki cocktail experience. This is a very close variation of the the Tiki-Ti drink.



PUKA PUNCH RECIPE
INGREDIENTS:
• 2 oz. white rum (bacardi, cruzan, etc.) 
• 1 oz. lime juice 
• 3⁄4 oz. of a dark Jamaican rum  
• 3⁄4 oz. orange juice 
• 3⁄4 oz. pineapple juice 
• 3⁄4 oz. passion fruit syrup 
• 2 tsp. honey mixed with 2 tsp. of hot water
• chilled 1⁄4 oz. falernum 
• 1 dash Angostura bitters 
• 3⁄4 oz. 151-proof rum (optional) 
• Pineapple, a orange wedge, and a maraschino cherry for garnish.


PROCEDURE
1. Put 1 1⁄2 cups ice cubes into a blender. Add all of the main ingredients then blend on high. Pour the mixture into a tall glass or tall tiki mug. 
2. Then gently pour the 151-proof rum over the back of a spoon into the cocktail.

New School Tiki Cocktail Drink Recipe: The DRAUGR

How to make the new school tiki cocktail drink called "Draugr." This one comes from the tikiphiles at Pegu Blog Laboratories.

DRAUGR DRINK RECIPE:• 1 part Krogstad Aquavit
• 1 part Appleton 12 year old rum
• 1 part Lemon Hart demerara rum
• 1 part Mount Gay Eclipse Silver rum
• 1 part fresh lime juice
• 1 part lingonberry syrup
• 1/2 part pineapple juice

Combine all the ingredients in a cocktail shaker with ice. Shake until frosty and then pour. Garnish with rambutan fruit, shown in photo or other scary exotic fruit.

Royal Hawaiian Hotel Mai Tai Recipe. A classic version of the tiki Mai Tai drink.


This is the tiki drink recipe for the the world famous "Mai Tai" from the Royal Hawaiian Hotel located in Waikiki Hawaii.  This is a version similar to the Mai Tai created by Trader Vic or Victor J. Bergeron. This version originated in Hawaii in 1953.

Royal Hawaiian Mai Tai Recipe
Ingredients:
  • 1 oz. of a Dark Rum
  • 1 oz of a Light Rum
  • 1 oz of Orange Curacao
  • 2 oz Fresh Orange Juice
  • 1/2 oz Fresh Lime Juice
  • A dash Orgeat Syrup
  • Dash Simple Syrup


Procedure:

Combine all the ingredients in the order above into a Old Fashioned style glass or tiki mug. Pour this over shaved or crushed ice.
Stir to mix with a swizzle stick. Garnish this with a slice of pineapple and a cherry.

Kona Coffee Tiki Drink: Kona Coffee, a Trader Vic Recipe.

Tiki Recipes: This is a very simple tiki cocktail recipe using Trader Vic's Kona Coffee.
This mixed drink is one of the first i tried after the release of the Kona Coffee.
It's just a easy drink to make. A great morning cocktail for the tiki lounge.
The caffeine is a nice little wake me up.

Kona Coffee Recipe
Ingredients
• 2 oz Kona Coffee
• 3 oz Dark Coffee (Hot)

Mixing Instructions:
Brew coffee so it is warm.
Blend in a tiki mug of your choice.
You can also use a irish coffee mug.
