OVERVIEW
The Scorpion Bowl drink is a potent mix of many spirits. The Scorpion Bowl is a great Tiki drink, super fun for a group or a couple. A very large 48 oz cocktail. Straws of course are a must. In the past it was served mainly in Chinese restaurants and tiki bars. It is made up of tropical juices, brandy, rum and tropical flowers. Sometimes Gin is added to up the proof. Sometimes the scorpion bowl is served as a "Volcano Bowl" where the center of the bowl has a mini volcano like structure in which is placed a high proof alcohol and set ablaze, truly a cool site to behold.

The drink became very popular again in the 1960's.


"Scorpion Bowl" Cocktail.
Scorpion Bowl Recipe
Ingredients:
• 1 oz. dark rum
• 1 oz. gold rum
• 1 oz. 151 Proof rum
• 2 oz. Gin
• 2 oz. Vodka
• 4 oz. Orange juice
• 4 oz. Pineapple juice
• 4 oz. Grenadine
Serves 6-8

Classic Trader Vic Scorpion Bowl Recipe
Ingredients
• 6 oz. Dark rum
• 1 oz. Brandy
• 2 oz. Orgeat or Almond Syrup
• 6 oz. Orange Juice
• 4 oz. Lemon Juice
• 1 oz. Gin (optional)
• Shaved Ice

OVERVIEW
The Planter punch cocktail is one of those classic vintage cocktail drinks from the golden age of tiki culture. 

ORIGINS:
Again, a bit of mystery surrounds this drink, as with all classic tiki cocktails. It's origins go back about 100 years to 1908 when it appears in NYT magazine article. The Planters Punch my refer to the Planter's Hotel in St. Louis, but that still remains uncertain.
RECIPES
PLANTERS PUNCH RECIPE (1940's)

• 2 oz. Dark Rum (Bacardi, Captian Morgan, Myers Rum)

• 1/2 oz. Lime Juice (fresh)

• 2 oz. Pineapple Juice

• 2 oz. Orange Juice

• 1/4 oz. Grenadine

• Cherry and a Orange Slice as a garnish

• OPTIONAL: Club Soda

MIXING INSTRUCTIONS:
Mix juices, ice and Rum in a cocktail shaker with ice. Shake well, and strain into an ice filled Tom Collins or highball glass.



PLANTERS PUNCH RECIPE (1930's)

• 1/4 oz. Lemon Juice

• 1/2 oz. Orange Juice

• 1/2 oz. Jamaican Rum

Another classic vintage tiki cocktail drink.  One of the triads of tiki cocktails, along with the Mai Tai and Zombie. Rummer has it that it was Frank Sinatra's favorite drink when visiting a certain tiki bar in California. Like the Zombie Cocktail, this is one stiff drink, and usually had a limit of 2 on the tiki bar menus.

At the core the drink calls for 3 rums, lime juice, grapefruit juice and honey. From there it has a few variations. Some add passion fruit, others guava, some cinnamon and even allspice syrup can be added to make the navy grog.

This drink is served very cold, the shaved ice was pressed into a cone, the straw inserted into the center, which makes a volcano type shape, a very iconic visual drink.

ORIGINS:
This one is gain shrouded in a bit of tiki mystery. Legend has it that the original formula is still a secret. Both Trader Vic and Don the Beachcomber have it in their books, but Don the Beachcomber is the true founder of the drink around 1941. But the seeds of the drink date back much, much farther than Don Beach.

The Royal Navy would mix rum, water and fruit aboard there ships around 1756. Having to be stored for a long time, the water would go a bit bad, think stale and slime. They would mix cinnamon, rum, lemon juice with the water to make it more pleasant tasting, and that is the true origin of the navy grog cocktail.

The addition of the rum would also help the water keep longer, and the citrus fruits added vitamin C to help fight off scurvy and other diseases the where common among sea folk at the time.

Also, there is a old Caribbean recipe that used light rum, water, grapefruit juice, orange juice, pineapple juice, cinnamon and honey, and this adds a bit to the historical story.

Navy Grog Recipe Variations:

Don the Beachcomber's Navy Grog Recipe:

1 oz Light Puerto Rican Rum (Bacardi Silver, Castillo White, Ron Castillo White)
1 oz Dark Jamaican Rum (Myers Dark, Coruba Dark, Appleton Estate)
1 oz Demerara Rum
3/4 oz Lime Juice (fresh)
3/4 oz Grapefruit Juice
3/4 oz Honey (warm the honey first)
1 oz Club Soda


Trader Vic's Navy Grog Recipe

3/4 oz Fresh lime juice
1/2 oz Grapefruit juice
3/4 oz Allspice syrup
1 oz Light Puerto Rican Rum (Bacardi Silver, Castillo White, Ron Castillo White)
1 oz Demerara rum
1 oz Gold Jamaican rum (Appleton Special Gold, Appleton Estate VX, Mount Gay Eclipse, Sea Wynde) 



Popular Navy Grog Recipe

• 1 oz Demerara rum (EX; El Dorado Dark)
• 1 oz Dark Rum (EX: Gosling’s Black Seal or Captain Morgan)
• 1 oz Light Rum (Cruzan Estate Light or Bacardi Carta Blanca)
• ¾ oz Fresh lime juice
• ¾ oz fresh grapefruit juice
• 1 oz Honey syrup (2 parts honey with 1 part warm water)
• ¾ ounce club soda

MIXING INSTRUCTIONS:
Shake all liquid ingredients in cocktail shaker. Pour into Collins glass or tiki mug filled with ice, top with soda.  Garnish with fresh fruit or flower.

The Art of the Mai Tai Cocktail. Tiki recipes and history of the Mai Tai.

By far, one of the super stars of the tiki bar.
No other cocktail drink says tiki quit like the legendary Mai Tai.

ORIGINS OF THE MAI TAI:
Mai Tai means, or is translated as meaning "Great, The Best!" That was the first words uttered during the tasting of the start of the Mai Tai experiment. 

There is a great debate over who invented the Mai Tai. Credit usually goes to the famous Victor Bergeron, aka "Trader Vic." Another famous tiki legend  "Don the Beachcomber"or Don Beach, also claims credit.  Trader Vic said that if anybody says they invented the Mai Tai, then they are a dirty lier.  

The original recipe, severed at Trader Vic's restarant, was kept top secret.  Ingredients were pre-mixed, so even the bartenders did not fully know what was in it. This still happens in todays pure blooded tiki bars. 

IMPORTANT NOTE: The Original Mia Tia did not have all the juices that todays restaurants serve. The only fresh juice in the original Trader Vic's recipe was lime.   Todays pubs serve the Mai Tia with a lot of pineapple juice, which the original Mai Mai never had.

Trader Vic's Original Mai Tai Recipe - 1944
  • 2 ounces of 17-year old J. Wray and Nephew Rum over shaved ice.
  • Add juice from one fresh lime.
  • 1/2 ounce Holland DeKuyper Orange Curacao.
  • 1/4 ounce Trader Vic's Rock Candy Syrup.
  • 1/2 ounce Orgeat Syrup (Trader Vics)
  • Shake in cocktail shaker.
  • Touch of fresh mint to garnish.


"Older Way" Mai Tai Recipe - Late 90's
  • 1 ounce Fine Jamaican Rum (Appleton Estate, Myers Rum)
  • 1 ounce Martinique Rum
  • 1/2 ounce Orange Curacao
  • 1/2 ounce Orgeat Syrup (trader vics)
  • Fresh Lime Juice 3/4 ounce
  • Mix & Serve
"Restraurant Style" Mai Tai Recipe
  • 1 1/4 ounces Light Rum (Bacardi Silver, Cruzan Light)
  • 1 ounce Dark Rum (Myers's Dark, Capitan Morgan)
  • 1/2 ounce Triple Sec (Potter's, Dekuyper)
  • 1/2 ounce Orgeat or Almond Syrup
  • 3/4 ounce Orange Juice
  • 3/4 ounce Pineapple Juice
  • 3/4 ounce Sweet and Sour Mix
  • Mix with Crushed Ice & Top with Dark Rum
  • Garnish with Cherry, Orange or Pineapple

"Restraurant Style Two" Mai Tai
  • 1 1/2 ounces Light Rum (Bacardi, Cruzan)
  • 1 1/2 ounces Dark Rum (Myers's Dark, Capitan Morgan)
  • 1 1/2 ounces Apricot Brandy (Dekuyper)
  • 4 1/2 ounces Orange Juice
  • 4 1/2 ounces Pineapple Juice
  • 1 1/4 ounces Grenadine (to sink or float)

"Quick and Dirty" Mai Tai 
  • 2 ounces Light Rum (any white rum)
  • 1 ounces Triple Sec
  • 2 ounces Pineapple juice
  • 1 ounce Orange Juice
  • 1 ounce Amaretto 
Glasses and mugs for the Mai Tai.
Tall old fashioned, fish bowl or favorite tiki mug.

Place ice in a glass.
Pour vodka, then orange juice into glass.
Garnish with orange slice.
