Tiki and Tropical Drinks: Appleton Bird Cocktail using Appleton Jamaican Rum.

Tiki and Tropical Drink Recipes: Learn how to make the Appleton Bird cocktail a new Jamaican mixed drink. Here is a new one for your logbooks, a great Appleton rum recipe right from Appleton Estate themselves that we thought we would share with you all. Appleton is a premier rum distiller famous in Jamaica for their fine rums. The Tia Maria, a coffee liqueur, also has origins in Jamaica and tastes of Jamaican coffee beans and vanilla. 

The Appleton rum gives the drink it's depth and the Tia Maria gives it it's complexity with notes of coffee and vanilla and a creamy texture. The creme de banana blends great and gives the drink a nice tropical vibe.  The orange juice helps to round everything out. A really nice tropical drink from Jamaica that would be a great additional to your tiki bar.

Appleton Bird Cocktail Recipe
Ingredients:
• 1 1/2 ounces Appleton Special Jamaica Rum
• 1/4 ounces Tia Maria (coffee Liquor)
• 1/2 ounces creme de banana
• 4 ounces fresh orange juice

Mixing Instructions:
Mix in a cocktail shaker with ice until cold and frosty.
Strain and pur into a tiki mug with ice.
You can garnish the cocktail with either a cherry or orange wedge or both.

Classic Tiki Cocktail Drinks: The "Jet Pilot" cocktail recipe using 3 types of rum!

Classic Tiki Cocktail Drinks: How to make the "Jet Pilot" cocktail for your tiki lounge.

This is a cousin of the famous "Test Pilot" tiki cocktail.
The origins of the "jet pilot' go back to around 1950, where the drink was invented at the Luau Restaurant. This drink really symbolizes many tiki drinks, it's got three rums and exotic fruit juices. It usually has a limit two or one in the tiki bar drink menus. This drink, as with many classic tiki cocktails, takes a bit of prep, but the rewards are well worth the effort. This is one of those vintage tiki cocktails that you just have to try, so give it a go! This one is potent, it contains three types of rum.  The Cinnamon syrup and bitters combine to give it a interesting edge.  The anise liqueur also helps to give the drink some complexity. It is amazing how all the ingredients in this drink blend so well together. If you like rum and want a great rum recipe, you have to give the Jet Pilot a go. It's a great addition to your tiki bar.

You can also use absinthe instead of Pernod, which is what we did. Also if you do not have any cinnamon syrup you can use the powered spice if you have to, but it is not preferred.

Jet Pilot Recipe: 
Ingredients:
• 1 oz Jamaican rum (Appleton, Wray and Nephew, etc.)
• 3/4 oz gold Puerto Rican rum (Ron Llave Supremo, Bacardi Gold, etc.)
• 3/4 oz 151-proof demerara rum (Lemon Hart)
• 1/2 oz grapefruit juice
• 1/2 oz Fresh lime juice
• 1/2 oz cinnamon syrup (Torani, Monin, etc)
• dash of Angostura bitters
• 6 dashes Pernod or Herbsaint or Absinthe
• 4 oz crushed ice
• cherry for garnish

Mixing Instructions:
Pour all of the liquid ingredients into a cocktail blender.
Add the ice to the blender.
Blend for about 10-15 seconds.
Pour into a hurricane, margarita glass or favorite tiki mug.
Garnish the cocktail with a cherry which is sometimes caramelized, or small toy plane.

This Tiki Cocktail won the 2010 Tales of the Cocktail Tiki Punch-up competition.

This is a complex and exotic tiki drink for your tiki bar. It is rather complex to make, but the effort is worth it. The Death in the South Pacific has won a few Tiki drink contests, which demonstrates the caliber of this tiki cocktail. A must try drink for any tiki cocktail adventurer. Death in the South Pacific was invented by Washington bartender Evan Martin. Here is what Evan has to say about the name; “The drink’s name is a play on Love in the South Pacific and Death in the Afternoon."

Here is what tiki expert Jeff Berry had to say; “This drink hits all the contest requirements on the nose: It creatively mixes multiple rums, sweeteners, and citrus to “tikify” the Planter’s Punch template; it has a full-bodied, layered, but not overcomplicated flavor; and its garnish shows theatrical flair, cleverly referencing the drink name.” This drink is a favorite to many.

This tiki cocktail takes a bit of prep, but is well worth it.

Death in the South Pacific Recipe:
Ingredients.

0.75 oz. Appleton Estate Extra 12 Year Old Rum
0.75 oz. Rhum Clement VSOP Rum
0.5 oz. Grand Marnier
0.33 oz. Trader Tiki Orgeat Syrup
0.33 oz. Fee Brothers Falernum
3 dashes Absinthe (Lucid Absinthe, Le Tourment Vert, Pernod, Kubler, etc.)
0.5 oz. Fresh lime juice
0.5 oz. Fresh lemon juice
0.5 oz. Fee Brothers Grenadine
0.5 oz. Cruzan Blackstrap Rum

Mixing Instructions: Mix all of the ingredients except for the grenadine and Cruzan Blackstrap Rum in a mixing glass with crushed ice. Swizzle the drink until cold and mixed. Pour in the grenadine. Overfill the glass with crushed ice and then pour in the Cruzan Blackstrap rum.

To Garnish: Take a bamboo skewer cherry through at the very top followed pineapple leaf and then cut off skin from 1 large orange slice and then cut the strips in half. Insert the ends through the skewer having them hang on opposite sides of each other. Then insert the straw through the loop in the bamboo skewer.

TIKI DRINK COCKTAILS: The Golden West, a mixture of port and aged rum.

How to make a tropical tiki cocktail drink called a Golden West.
This drink is named after a Prohibition-era rumrunning clipper ship. 
It is a simple concoction with great flavor.


INSTRUCTIONS for the GOLDEN WEST RECIPE
• A splash of white port in a martini glass 
• 2 ounces of eight-year-old Bacardi 
• 3/4 ounce white Dubonnet (see note)


Serve stirred over ice. 
Garnish with A strip of orange peel.


NOTE: Dubonnet is a wine-based aperitif. It is a blend of fortified wine, herbs, spices and quinine.

TIKI TOP NOTCH VOLCANO COCKTAIL RECIPE:
• 4 oz Demerara simple syrup
• 4 oz Fresh lime juice
• 4 oz Pineapple juice
• 1 oz Passion fruit juice
• 1 oz Maraschino Cherry liqueur
• 4 oz Aged South American or Caribbean white rum
• 4 oz Amber rum
• Cinnamon and nutmeg for sprinkling
1. Combine all ingredients but the spices in a pitcher. Mix with lots of ice until well frosted. Strain over ice into a bowl.
2.
Mix spices in a salt shaker. Light a long wooden match and hold over bowl. Shake spices 3 or 4 times over flame. spoon into 6 to 8 oz cups.


YieldS: 4


Note: To make the syrup, combine equal measures Demerara sugar and boiling water in a small jar. Seal jar, wrap in towel and shake until sugar dissolves. Syrup will keep, refrigerated, up to 2 weeks.

Tiki Drink Recipe: Carlo Sud

Tiki cocktail recipes: Adapted to mirror the tiki drink from Smuggler’s Cove, San Francisco.

Carlo Sud Recipe
Ingredients:
• 1/2 ounce Benedictine
• 2 ounces a Amber Rum of your choice
• 2 dashes of some Angostura bitters
• garnish with a fresh lemon peel

Mix ingredients in a shaker with ice until well chilled and frosty.
Strain into a cocktail or tiki glass.
Run the lemon twist around rim and then drop it into drink.

New TIki Cocktails: The Dead Reckoning Drink Recipe

How to make the new school tiki cocktail drink "The Dead Reckoning".

This Neo Tiki drink recipe was created by the tiki legend Martin Cate. Cate is starting a new meca of tiki called Smugglers Cove. This drink is complex and well blended and very potent. Very interesting tiki drink in that it mixes rum with wine.

Ingredients for "The Dead Reckoning"
• 2 oz. aged rum (Cate used Flor De Cana 12-year, Cockspur 12-year)
• 1/2 oz. Navan vanilla liqueur
• 1/2 oz. pure maple syrup
• 1/2 oz. tawny port
• 1 oz. fresh lemon juice
• 1 oz. pineapple juice
• 1 dash Angostura bitters (do not overdue)
• 1 oz. club soda


Directions
Combine all ingredients but the soda water in a cocktail shaker. Add ice, shake and strain into a highball glass over fresh ice. Top with soda water. Stir gently. Garnish with pineapple leaves, mint spring, and a lemon spiral.

New School Tiki Cocktail: The Spinnaker Swizzle.

How to make the Spinnaker Swizzle Recipe.

Here is a new one your your tiki bar, we found this one in Esquire magazine. This tiki drink recipe has aged rum, bitters and Grand Marnier as the main tastes.




Spinnaker Swizzle Recipe:
INGREDIENTS
• 1 1/2 oz Light Aged Rum (Cruzan Single Barrel)
• 1 oz Linie Aquavit
• 1/2 Grand Marnier
• 1/2 oz Simple Syrup (1 part Sugar to 1/2 part Water)
• 1 oz Fresh Lime Juice
• 1/2 tsp Angostura
• Shaved Ice

PROCEDURE
1. Fill the glass or tiki mug with shaved ice.
2. Shake ingredients in a cocktail shaker until frost forms.
3. Pour into tiki mug.
4. Add more shaved ice.
5. Garnish with mint sprig.
