Tiki Drink Recipe: How to make a top Notch Volcano Tiki Drink.

How to make a classic tiki cocktail like at the Smuggler's Cove called the Top Notch Volcano.
Adapted version from Smuggler’s Cove Tiki Bar, San Francisco.

TIKI TOP NOTCH VOLCANO COCKTAIL RECIPE:
• 4 oz Demerara simple syrup
• 4 oz Fresh lime juice
• 4 oz Pineapple juice
• 1 oz Passion fruit juice
• 1 oz Maraschino Cherry liqueur
• 4 oz Aged South American or Caribbean white rum
• 4 oz Amber rum
• Cinnamon and nutmeg for sprinkling
1. Combine all ingredients but the spices in a pitcher. Mix with lots of ice until well frosted. Strain over ice into a bowl.

Mix spices in a salt shaker. Light a long wooden match and hold over bowl. Shake spices 3 or 4 times over flame. spoon into 6 to 8 oz cups.


YieldS: 4


Note: To make the syrup, combine equal measures Demerara sugar and boiling water in a small jar. Seal jar, wrap in towel and shake until sugar dissolves. Syrup will keep, refrigerated, up to 2 weeks.

Tiki Drink Recipe: Carlo Sud

Tiki cocktail recipes: Adapted to mirror the tiki drink from Smuggler’s Cove, San Francisco.

Carlo Sud Recipe
Ingredients:
• 1/2 ounce Benedictine
• 2 ounces a Amber Rum of your choice
• 2 dashes of some Angostura bitters
• garnish with a fresh lemon peel

Mix ingredients in a shaker with ice until well chilled and frosty.
Strain into a cocktail or tiki glass.
Run the lemon twist around rim and then drop it into drink.

This tiki drink recipe is a version of the tiki drink at the Smuggler’s Cove, Rum Bar in San Francisco.

This drink is strong, complex and tasty, a neo-tiki classic.
A featured drink at the Smugglers Cove.

The Chadburn Tiki Drink Recipe:

• 1/2 oz red tawny Port (fortified aged wine, with higher alcohol contect than wine)
• 1/2 oz pear liqueur (J Pear Liqueur, Mathilde Poire, Clear Creek)
• 2 oz aged dark rum (Cruzan, Appleton)
• 1 to 2 dashes Bittermens Xocolatl Mole bitters.

Mixing procedure:
Shake in cocktail shaker until cold.
Pour over ice.
