• 1 tsp White Sugar
• 1 White of Egg
• 2 Tbs Cream
• 3 Drops of Orange Flower Water (See Note Below)
• 1/2 oz Fresh Lime Juice
• 1/2 oz Fresh Lemon Juice
• Soda Water to top
• OPTIONAL is a few drops of Vanilla Extract.
Directions for Ramos Gin Fizz:
Shake in a cocktail shaker for 2-3 minutes with ice.
Pour into a hurricane glass.
Top with Soda and stir to foam.

Aku Aku means many things, one of which is a spiritual guide.
AKU AKU RECIPE:
• 1 oz White Rum
• 1/2 oz Peach Liqueur
• 1/2 oz Simple Syrup (Sugar Water)
• 2 oz Pineapple Chunks (fresh)
• 10 Mint Leaves (Fresh)
Blend in a cocktail blender for 10 seconds until smooth.
Garnish with Pineapple Chunk and Mint Sprigs.

OVERVIEW
Makes a killer morning or afternoon tiki cocktail.
We tried it this morning, and thought it was
a great new tiki drink, destined to be a classic.
This cocktail was invented by Humuhumu, one of
the webs experts on all thing tiki, because
she thought we all needed a morning tiki drink,
and i must say, she was right!
Hair of the Mongoose Recipe.
INGREDIENTS:
1/2 oz lemon juice
1/2 oz lime juice
1/4 oz passion fruit syrup
1/4 oz Licor 43
1/2 oz Clement Creole Shrubb
1-1/2 oz Clement Premiere Canne rum
1 oz half-and-half
1 egg white
Pour into a tiki or bamboo mug, and top with:1-1/2 oz ginger beer, Add ice to the mug to fill, if necessary. Grate fresh ginger root over the top.

• 3-4 oz Pusser’s Rum
• 4 oz Pineapple Juice
• 1-2 oz Cream of Coconut (coco lopez)

• 1/2 tsp Fresh Nutmeg or Cinnamon (as a garnish)
• 9 oz Crushed Ice.

ClASSIC TIKI COCKTAILS: The "Test Pilot" Recipe. A old school tiki drink.
How to make a classic old school tiki drink.
Created by Don the Beachcomber in 1941, the Test Pilot is a great tiki cocktail. It's flavor is great, but a little different tasting compared to other classic tiki cocktails. Most modern Test Pilot recipes you will find are found in Beachbum Berry’s Grog Log. A great book on classic tiki cocktails.

Test Pilot Recipe:
Ingredients:
• 3/4 ounce light Puerto Rican rum
• 1 1/2 ounces dark Jamaican rum (Myers's Rum)
• 1/2 ounce fresh lime juice
• 1/2 ounce Falernum (a sweet syrup, see note)
• 3 teaspoons Cointreaudash Angostura bitters
• 1/8 teaspoon Pernod
Mixing Instructions:Blend with 1 cup crushed ice for 5 seconds, then pour into double old-fashioned glass. Add more crushed ice to fill. Garnish with a wooden oyster fork with maraschino cherry skewered on prongs.

Falernum is a sweet bar syrup used in tiki, tropical and Caribbean drinks. It has tastes of almond, ginger and cloves, and lime, and sometimes vanilla or even allspice.
Pernod Ricard a French company that produces alcoholic beverages. Pernod Anise and Ricard Pastis, are both anise liqueurs, and often referred to as simply Pernod.

INGREDIENTS
- • 1 1/2 oz brandy
- • 1/2 oz sherry
- • 2 dashes of Angostura bitters
- • 3 oz vanilla cream soda
- • 1 long lemon wrapped around 1 fresh vanilla bean
DIRECTIONS
- Fill a pint glass with ice. Add the brandy and sherry; stir well. Strain into an ice-filled collins glass and stir in the vanilla soda. Garnish with the twist-wrapped vanilla bean.

OVERVIEW:This is on of the first real popular
cocktails. It has a long history, dating
back over 100 years.
Old Fashioned Drink Recipe:
• 2 oz. bourbon whiskey (Jack Daniels, Marker's Mark, Jim Beam, wild turkey, etc.)
• 1 teaspoon fine sugar
• 2 dashes bitters (your choice)
• orange Sslice and a maraschino cherry.
Fill a glass with ice, add the bourbon, and stir.

Classic Tiki Cocktails: Trader Vic's Molokai Mike Cocktail Recipe
Another Classic Trader Vic Tiki Cocktail.
OVERVIEW:
This is a classic tiki cocktail drink, going back to the golden age of tiki culture.
This mixed drink is a two tone or layered cocktail.
The secret to making a great Molokai Mike, is how you mix the Molokai.
You must blend the bottom layer quick, just mix a bit quickly, blend the top layer well.
Molokai Mike Recipe:
Bottom layer Molokai Mike• 1 oz. silver rum (Captain Morgan Silver Rum, Baroca Silver, Mount Gay, Bacardi, etc.)
• 1 oz. orange juice
• 1 oz. lemon juice
• 1/2 oz. brandy (Christian Brothers Brandy, E & J Distillers, etc.)
• 1/2 oz. orgeat syrup
• 1/2 cup crushed ice
Top layer Molokai Mike• 1 oz. gold rum (Bacardi Gold, Appleton Gold Rum, Tortuga Gold Rum)
• 1 oz. grenadine
• 1 oz. crushed ice
Mixing Instructions: Mix ingredients for the bottom layer in a blender for 1-2 seconds and
pour into glass.
Mix top layer in the blender, and blend about 12 seconds.
Gently pour top layer over the bottom layer.
Garnish with umbrella and tropical fruit.

Busting bar myths: The Mai Tai did not come from Hawaii or Tahiti
The Mai Tai was not invented in either Hawaii or Tahiti. The drink was originated in Oakland, California. Drink recipe creator, Victor Jules “Trader Vic” Bergeron came up with the original recipe for a Mai Tai in 1944 while working as a bartender in the service bar of his Oakland restaurant, Trader Vic’s.
Victor pulled a 17-year-old rum (J. Wray Nephew Jamaican rum) off the shelf and decided to use it because of its golden color, medium body and rich pungent flavor. With the rum, Victor added fresh lime juice, orange curacao from Holland, a dash of Rock Candy Syrup and a dallop of French Orgeat (to give the drink a subtle almond flavor). He then added a generous amount of shaved ice and shook the whole drink vigorously by hand. The drink was then served in a 15-oz glass, garnished with half of the lime and a branch of fresh mint.
At the time in which the drink was created, Victor had a couple of friends visiting from Tahiti who happened to be sitting at the bar. Ham and Carrie Guild were the chosen guinea pigs for Victor’s new rum drink concoction. Apparently, Carrie loved the drink so much that she exclaimed in Tahitian, “Mai Tai-Roe Ae!!” which when translated into English means “Out of this world-The Best!” It was at that moment that the “Mai Tai had not only been born, but named.
In 1953, Victor brought his wildly acclaimed Mai Tai to the Hawaiian Islands when he was asked by the Matson Steamship Lines to design their cocktail menu for the bars at their Royal Hawaiian, Moana and Surfrider Hotels. In 1954, the Mai Tai was one of the many new drinks to be included in the bar service for the American President Lines. It is estimated that there are several thousand Mai Tais served daily in Honolulu alone. Trader Vic’s restaurants easily sell more Mai Tais than that, daily, in all 18 of their restaurants, worldwide!
The Original Mai Tai Drink Recipe:
• 2 oz. 17-tear-old J. Wray Nephew Jamaican rum
• ½ oz. French Garnier Orgeat
• ½ oz. Holland DeKuyper Orange Curacao
• ¼ oz. Rock Candy Syrup
• Juice from one fresh lime
Shake in cocktail shaker. Garnish with half of the lime shell inside drink. float a sprig of fresh mint at the edge of the glass.
